One of the reasons why cholesterol increases when on a low carb diet is lower thyroid function.
Carbs (glucose) are required for thyroid hormone production.
Thyroid hormones (T3 & T4) metabolize cholesterol.
Carbs also lower cortisol. Cortisol lowers thyroid function.
